Kurkuri bhindi recipe/ How to make kurkuri bhindi/ कुरकुरी भिन्डी / Crispy Okra recipy

Okra/ladyfinger is one of my favorite vegetables, actually the most favorite. Whether it's okra prantha, okra raita, okra pkoras or okra sandwich (I make with leftover cooked okra) that may sound crazy to you (will definitely share recipes later) I love experimenting with it. So, today's experiment was kurkuri bhindi/crispy bhindi/crispy okra. It came out really crisp and delicious. :) This can be served as a side dish with your main course.

Kurkuri Bhindi

Before the recipe I would like to share a tip on 'How to choose fresh Okra'. It's very important to choose raw Okra for your recipe.

How to choose Okra 

  • Always avoid dull, soft and very hard Okra.
  • Take one Okra and break into two-
    • Fresh Okra will break easily.
    • Fresh Okra will make a sound while breaking.
  • Overripe Okra will have a sticky texture and it may spoil your dish.
Now when you have chosen fresh Okra for you dish lets read the recipe for Kurkuri Bhindi/ Crispy Okra and try it out.. :)


  • Okra/Ladyfinger- 250 gms
  • Chickpea flour/besan- 2 tbsp
  • Rice flour- 1 tsp
  • Salt- to taste
  • Turmeric powder- 1/4 tsp
  • Red chilli powder- 1/2 tsp or to taste
  • Dry mango powder/ Aamchoor- 1-2 tsp
  • Oil- for deep frying


  • Clean Okra with a damp cloth very well.
  • Let it dry completely.
  • Once it dries out cut both ends of each Okra, you can remove seeds if you don't like them.

  • Now cut them lengthwise making 5-6 pieces of each.

  • Take these pieces in a bowl, add chickpea flour, rice flour, salt, turmeric powder, red chili powder, and mix well.
  • Do not add water to make paste.
  • Keep it aside for 10-15 minutes, salt will make this mixture a little moist.
  • Heat sufficient oil in a deep pan/wok for deep frying.
  • Now deep fry these fingers on high flame til they turn crisp and golden brown.

  • Drain on a kitchen towel.
  • Sprinkle dry mango powder on it, serve and enjoy.
